Shakshuka is a Mediterranean, one-pot breakfast—perfect for camping. Adding a can of chickpeas helps keep you fuller longer and bumps up your protein intake to fuel those fun adventures outdoors!


Ingredients

Toppings (optional): crumbled feta cheese, chopped green onion, hot sauce

Preparation
  1. Heat oil in Sauté Pan over medium-high heat. Add frozen vegetables and cook until warmed, about 3 min. Add chickpeas to pan and cook 1 min.
  2. Stir in sauce and sauce mix; bring to a simmer, about 3 min, stirring often.
  3. Use the back of a spoon to form 4 shallow wells in the mixture. Crack an egg into each well. Reduce heat to medium-low and cover; simmer 7–8 min, or until eggs are just set.
Tips

Simmer for an additional 2–3 min if you like your eggs hard-cooked.
